This recipe I have discovered in “American Indian Cooking Before 1500” by Mary Gunderson. The combination of salmon and blackberries is out of this world. I am going to try blackberries in another grilled salmon recipes.

• 3 salmon steaks, 1 inch thick(2,5 centimetres), about 6 ounces each
• 1 bunch green onions
• 3 tablespoons olive oil
• ¼ cup fresh or frozen blackberries
• paper towel
• plate
• cutting board
• sharp knife
• measuring spoons
• 2 small bowls
• dry ingredient measuring cups
• pastry brush
• tongs
Heat grill or broiler. Rinse salmon steaks and pat dry with paper towel. Set on plate. Cut roots off bulb end of onions and trim top 3 inches (8 centimetres) of onion greens. Measure 3 tablespoons olive oil into a small bowl. Put ¼ cup blackberries into another small bowl. Arrange whole onions on grill or broiler pan . Brush with olive oil. Grill or boil about 1 minute. Turn with tongs. Grill or boil another minute. Move onions to side of grill or broiler pan. Brush both sides of the salmon steaks with olive oil. Place steaks on grill or broiler pan. Cook for 3 to 5 minutes. Salmon is done when flesh whitens slightly and flakes when pressed with a fork. Before removing steaks from grill or broiler, put a spoonful of blackberries on top of each steak. Cook one minute longer. Remove steaks from grill onto serving plates. Arrange a few green onions on top of each steak and serve immediately.

This is Chinese style grilled salmon. I found this recipe in

“The Best Little Grilling Cookbook”

By Karen Adler

• 1 pound salmon steak or fillets, cut into cubes
• ½ pound sugar snap peas, stems removed
• 12 cherry tomatoes
• ½ red onion, sliced
• 3 cups cooked white rice

• ¼ cup soy sauce
• ¼ cup rice wine vinegar
• 2 tablespoons honey
• 4 cloves garlic, minced
• 1 teaspoon ginger
• 1 teaspoon sesame paste
Combine marinade ingredients in a large glass bowl. Add salmon cubes and peas to marinade with tomatoes and onions. Marinade for about 30 minutes. Prepare and preheat grill. Pour salmon mixture into well grassed grill wok over the sink and partially drain liquid. Place wok over the hot coals and stir-grill fish and vegetables, tossing with large wooden spoons for 6 to 8 minutes. Move wok to indirect-hest side of grill. Close lid on grill and cook for another 4 to 5 minutes. Serve with rice.

I like it very much and it is also easy to prepare.

Moonshine salmon

Moonshine salmon – number one of my grilled salmon recipes. This is my favorite. It is very simple to make but interesting and tasty. This recipe was developed long time ago by Norwegian Vikings.

  • salmon filet with skin, remove all fish bones
  • lemon
  • glass of moonshine, brandy or vodka
  • marjoram, tarragon, garlic, salt

  • wooden plank, drill holes in it to attach salmon with wooden spikes. Use untreated wood.
  • wooden spikes to firm the salmon filet on a plank

Place salmon on plank. Powder with herbs and salt. Sprinkle with lemon juice, drizzle moonshine or brandy over it. Nail salmon to a plank using wooden spikes. Put the plank with salmon vertically on a grill. Alternatively you can load the plank in a fire place. Do not put it directly in to the fire. Plank should be placed aside. It’s important to heat the fish not to burn it. After 40 to 50 minutes it should be ready. Serve on plates just cut off bites of fish from plank.

Bon appetite !
